BERLINERWEISS WHEAT ALE BREWED WITH PICKLE JUICE
PKL FKR is an 85% white wheat Berlinerweiss. Using a modified decoction mash to boil a portion of the grains giving a mild flavor and texture to the beer. The balance is made up of Pilsner malt.
Primary fermentation occurs immediately after the mash. This beer is allowed to rest for 7 days with our spontaneously harvested culture of wild yeast and bacteria. Pickle juice is then added and a second fermentation is allowed to run its course to fully dry out any remaining sugars and tie together all of the ingredients in this beer. Once fermentation is underway, each keg and bottle is racked off and allowed to finish conditioning in the final vessel fot 3-4 weeks before release.
The beer is a super-light bodied session sour wheat ale with a distinct pickle vinegar both in the nose and the finish. The vibrant carbonation gives a lighter mouthfeel and the interplay of pickle juice, tart lactic sourness and light wheat make each sip uniquely memorable.
